Chef Amninder Sandhu’s latest venture offers a seven-course degustation menu crafted from ingredients grown in her kitchen garden. Her team of ten local women slow-cooks each dish over an open fire, embracing Sandhu’s signature gas-free cooking style. From transforming orange marigolds into sorbet to slow-cooking meat in pits and finishing with a crisp paan dipped in thandai, Palaash’s flavors are as bold and rooted as the trees it honors.
