A degustation menu in a clearing in the woods. A kitchen garden that spills into a dining lounge. Women from the local village navigating flavour and fire, cooking with produce from the soil their neighbours till. Conceived by Chef Amninder Sandhu, F&B at Tipai is a celebration of the land and its people.

Consistently rated among India’s top chefs with restaurants in Mumbai and Goa, and a stint on Netflix’s The Final Table, crafting an F&B destination in a remote wildlife sanctuary is Chef Amninder’s most audacious adventure yet. Our farm to fork experience brings you the depth of flavour her signature gas-free cooking philosophy is loved for. Reimagining indigenous ingredients while putting heirloom culinary techniques to their finest use, the kitchens of Tipai are comfortingly nostalgic and delightfully experimental.

Our dinner-only restaurant is set in a grove of palaash trees. Chef Amninder Sandhu’s all-women team serves a hyper-local seven-course degustation menu rich with ingredients plucked fresh out of our garden just 10 feet away and produce from organic farms in the neighbourhood. At Palaash, Chef Amninder Sandhu cooks generational recipes of Marashtra, Madhya Pradesh and Andhra Pradesh over open fire, in underground barbecue pits, on chulhas and sigris, in cast iron, bamboo and stone; slowly and enthusiastically, till each flavour is exactly as it should be. Every course pays homage to Chef Amninder’s Sikh heritage, her childhood spent in Assam, her many years spent as a trainee in Mumbai and her journey to discovering her love for the techniques of traditional, ancient methods of slow cooking.

Chef Amninder Sandhu’s 100% women-led team cooks over open fire, in underground barbecue pits, on chulhas and sigris, in cast iron, bamboo and stone; slowly and enthusiastically, till each flavour is exactly as it should be.

Sit back and enjoy a bite or a drink, while you take in a bird’s-eye view of Tipai’s wilderness. Start your day with a wholesome breakfast — eggs to order, fruits harvested the same morning from our kitchen garden, coffee brewed fresh in front of you on the island bar. Stop by for a hearty Maharashtrian thaali for lunch. As afternoon wanes, put your feet up with your beverage of choice at Mohro.

At our community dining table, you’ll never run out of conversation or things to savour, no matter the time of day. From gola to gelato, chaat to charcuterie, thali to platter, and everything in between, Perch is ideal for gatherings, sumptuous meals and a bite whenever you’re feeling peckish.

Drink in the atmosphere, while you soak in the spirits of Tipai at Mohro. Our beverage menu and signature cocktails are curated by legendary bartender, former Diageo Brand Ambassador and co-founder of Avallen Spirits, Tim Etherinton-Judge. From the classic to the adventurous, our bartenders mix a mean cocktail, with seasonal extracts from berries and fruits grown by our local farming community. Don’t forget to sample our signature mohro or mahua brews.

THE GARDEN KITCHEN

Wadi

Wadi is our al fresco dining experience at Tipai, set amidst our organic kitchen garden. Blurring the lines between kitchen and garden, vines climb up pillars as sunlight dances off a glass of bubbly. Graze on Mediterranean, Japanese and Pan Asian platters that celebrate fresh produce grown right here at Tipai, and our neighbouring hamlets. Indulge in a lazy Mediterranean brunch or a night of pizza making with our culinary team in our wood-fired oven.

Surrounded by rows of fresh herbs, organic fruits and vegetables, Wadi’s immersive dining experience invites you to slow down and smell the rosemary.
